My Mother used to make these for our family nearly every New Years
celebration. With a family of 9 it took a lot of them to fill us up.
I can still smell them frying in the kitchen and taste the icing
sugar melting in my mouth.
2 beaten eggs
1/2 cup sugar
2 TBSP baking powder
3 TBSP orange juice
1/2 tsp vanilla
pinch of salt
1 cup milk
2 cups coarsely chopped apples, not peeled, use firm ones
1 cup raisins, (optional)
Blend all ingredients except apples and raisins until a batter is formed. Blend fruit into the batter. Let stand for about 20 minutes or more in a refrigerator.
Deep fry at 350 o F for 15 minutes or until golden brown. Roll fritters in icing sugar while hot. Serve hot.

This is another of my Mother's specialties. The very best I have ever eaten.
1 medium sized red cabbage
4-6 whole cloves
1 TBSP salt
2 bay leaves
2 TBSP vinegar
3-4 medium apples, peeled, cut into pieces
1 TBSP cinnamon
4-5 TBSP sugar
Bring large pot of water to a boil with cloves, salt, bay leaves, and vinegar. Shred cabbage finely and add to boiling water. Add apples and cinnamon. Cook for 2.5 hours. Add sugar and cook for 15 more minutes.

Quick, easy and very tasty. You can sprinkle grated cheese on the potatoes for extra flavour.
1 TBSP oil
1 medium onion
2 lbs. ground beef
salt and pepper to taste
6 medium potatoes, cooked
1/2cup milk
2 TBSP butter
16 oz can of corn, drained
Heat oil in a skillet, add finely chopped onion. Cook until
transparent. Add beef and brown. Season with salt and pepper. Drain
off fat. Pat with paper towel to absorb more fat.
Mash potatoes with milk and butter.
In 13 x9 x 2 pan spread the meat, top with a layer of corn. Frost with a layer of potatoes. Bake at 350 o F for 1/2 hour or until heated. Run under broiler 5 minutes to brown the top. Serves 8.

If I was ever locked for an extended period of time in a bomb shelter and could only eat one type of food, this would be it.
3/4 cup flour
1 tsp baking powder
1/2 tsp salt
1 pkg 4 serving size vanilla pudding and pie filling (not
instant)
3 TBSP margarine
1 egg
1/2 cup milk
Combine and mix all ingredients well. Put in a greased 10" deep dish
pie pan. Spread evenly.
19 oz can sliced peaches
Drain peaches, reserving the juice. Arrange peach slices over the top of base about 1 inch from the edge.
1 - 8 oz pkg cream cheese
1/2 cup sugar
Mix cream cheese and sugar with 3 TBSP peach juice. Spoon over peaches to within 1 inch of peach edge.
1 TBSP sugar
1/2 tsp cinnamon
Mix and shake over pie. Bake at 350 o F for 30-35 minutes.

My husband's favorite. His Mother makes it for him almost every time we are there for dinner.
1 envelope unflavored
gelatin
1/4 cup cold water
1/2 cup boiling water
2 - 1 oz squares unsweetened chocolate ( or 3/4 cup chocolate
chips)
3 egg yolks
3 egg whites
1/3cup sugar
1/2 cup sugar
1/4 tsp salt
1 tsp vanilla
1 - 9" coconut or graham pie crust
Soften gelatin in cold water. In saucepan, combine boiling water and
chocolate. Stir over low heat until blended. Remove from heat. Add
softened gelatin and stir until dissolved. beat egg yolks until thick
and light. Gradually beat in 1/3 cup sugar. Add salt and vanilla.
Gradually stir in chocolate mixture. Chill until mixture mounds. Stir
until smooth.
Beat egg whites until soft peaks form. Gradually add 1/2cup sugar,beating until soft peaks form. Fold into chocolate mixture. Pile into crust. Chill until firm. Top with whipped cream. Drizzle with Syrup Trim (heat 1.5 TBSP light corn syrup,1/2 oz chocolate square until blended).

This is very easy to make and addictive.
Crust:
1 cup flour
1 tsp baking powder
3 TBSP icing sugar
1/3 cup butter or margarine
1 egg, beaten
4 tsp milk
Mix flour, baking powder, and icing sugar in a bowl. Cut in the butter until mixture resembles course crumbs. Add egg and milk. Stir until a ball forms. Put into a 11 x 7 x 2 inch greased pan .
Filling:
3 cups dried raw rhubarb
1 - 3 oz pkg strawberry Jello
Place rhubarb in crust. Sprinkle with gelatin.
Topping:
1/2 cup flour
1 cup sugar
1/3 cup butter or margarine
Mix together until crumbly. Sprinkle over rhubarb. Bake at 350 o F for 45-50 minutes. Allow to cool until firm. Serves 12-15.

This is from my Mother-in-Law and they are the best I have ever eaten. They melt in your mouth. She used to send them to my husband while he was attending University and he used to barter with them.
1 cup butter (no substitute)
1/3 cup granulated sugar
1 egg yolk
1 tsp vanilla
2 cups flour
1 cup finely chopped nuts (optional)
Heat oven to 350 o F.
Cream butter, add sugar, egg yolk, and vanilla. Add flour, blending well. On a floured board roll dough out to 1/2" thickness. Cut into desired shape or size. Bake on ungreased cookie sheet for 15-20 minutes until golden.

My Mother and I used to make double batches of these and we had to hide them so we would have some for more than a couple of days.
2 cups raisins
1 cup water
Boil in a pan for 5 minutes with lid on. Let stand until
lukewarm.
Cream until fluffy:
1 cup shortening
2 cups white sugar
3 eggs
Stir all the following dry ingredients together
3-4 cups flour
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 tsp ground cloves
1 tsp baking powder
Add to the egg mixture until well blended. Add 1 tsp baking soda to cooled raisins and stir into batter. Drop onto ungreased baking sheet, bake at 375 o until brown.

These are non-fat and very tasty. Another family favorite from when I was a kid.
1.5 cups flour
1 cup sugar
3 eggs
1 tsp cream of tartar
1/2 tsp baking soda
1/8 tsp salt
Sift dry ingredients into a bowl. Beat eggs until light and creamy. Mix the two well. Drop on a greased cookie sheet using a TBSP. Bake in a 370 o F oven for 10-12 minutes or until golden.

This recipe was my youngest brother's favorite. And only one bowl to clean.
1.5 cups sugar
1/2cup cocoa
1.75 cups flour
1.5 tsp baking soda
1 tsp salt
1/2 cups shortening
1.5 cups buttermilk
2 eggs
1 tsp vanilla
Blend and beat all ingredients for 3 minutes. Grease two 8" pans and dust with cocoa. Pour into cake pans. Bake at 350 o F for 30-35 minutes.

This cake my Mother had this in her recipe collection since she was a new bride. I am not sure what the origin is any more. One of our family favorites. This one was always served when my parents had card parties with their friends.
2 cups sifted flour
1 cup sugar
1 TBSP baking powder
1 tsp salt
1/3 cup soft butter
2 eggs
1 cup milk
2 cups finely grated apples
1 cup raisins
1/2 cup sugar
1/2 tsp cinnamon
Heat oven to 350 o F. Grease a 9" square pan. Sift flour, sugar, baking powder, and salt. Add butter. Beat egg and milk together with a fork and add to flour mixture. Beat hard for 2 minutes. Stir in apples and raisins. Spread evenly in pan. Combine 1/2 cup sugar and cinnamon together and sprinkle on the cake. Bake for 35 minutes or until a toothpick comes out clean.

This recipe is the favorite of our youngest daughter. No one could make them as good as her babysitter so I had to get the recipe. One of the best I have ever eaten.
1/2 cup Miracle Whip
1 egg
1.5 cups all purpose flour
3 medium ripe bananas
1 cup sugar
1 tsp baking soda
1 tsp salt
Combine Miracle Whip, egg, sugar, and mashed bananas. Add flour, baking soda, and salt. Bake in a greased loaf pan, 60-70 minutes, in a 350 o F oven. Let stand for 10 minutes. Remove from the pan.
IF making muffins, bake in muffin tins for 15-18 minutes.
